Both styles are 200 IMCU¬† full strength, GM free and never an “essence”¬† our vegetarian rennet is both halal and kosher certified

The use of rennet:

With out this marvel cheese as we know it in the modern world wouldn’t exist breaking milk down to the curds & whey also used in desserts like Junket add some of our semi hard cheese cultures for cheese curds for poutine. Our rennet gives you great results every time.
